What does Autumn mean to you? Interchangeable with the fall season, it’s the time of year when we leave summer and head toward winter. Growing up on the East Coast, it meant all kinds of great foods were on their way. Fall harvest fruits and vegetables are delicious and some of the best flavors to pair with my favorite dishes. It’s interesting how these flavors lend themselves to the proteins I find myself cooking in these months, too. Oven roasted chicken, turkey, or braised meats like bison and venison, all pair well with root vegetables and squash. With Halloween and Thanksgiving right around the corner, squash and pumpkin will be readily available for you to experiment with. They are very inexpensive and so tasty. Why you’d want to eat white potatoes, rice, or pasta over squash is beyond comprehension. Acorn squash, spaghetti squash, delicata squash are all easy to cook, either roasted in the oven or boiled. Fill your meals with flavor!
