Yes, you can eat shrimp for breakfast.  I’m always looking for ways to change things up.  Shrimp is a protein I don’t use too often, due to cholesterol, but is a perfect example of one that is versatile, easy to buy, and prepare.  I but frozen, raw shrimp.  Costco sells 2 lb bags in the $12 range in the 31-40 size.  That means that they are measuring the size of the shrimp by how many there are in a pound.  21-25 size is bigger that a 31-40.  And U-10 means under 10 per pound and that’s giant.  A portion size is around 3 to 4 ounces, or you can count a fourth based on your shrimp size.  When I use 31-40s, I count out 8-10 shrimp.  Right out of the freezer, they thaw quickly in cold water.  Heat your pan on medium high heat, add a tablespoon of olive oil, throw in some veggies first, then add your shrimp when the veggies are done.  I used okra and garlic today.  It’s a flavorful breakfast!
