Any of you that eat egg whites on a regular basis know the inconvenience of separating yolks, and the feeling you get whenever you throw yolks away. I won’t eat yolks every day, despite their nutritional value, simply because of cholesterol intake. But I think it’s very important to vary your protein sources to challenge your system in working for its nutrients. My latest find is Real Egg, from Costco. It comes in a case of 6 pints for about $9 and gives you egg whites ready to pour into your skillet. This is a modern day convenience and one of the few packaged foods I eat. They are very affordable since the equivalent in whole eggs is about $20. The shelf life on eggs is great so don’t be afraid of not being able to use them before expiration. If products like these can help you stay on a healthy diet, use them. Today, I had a spinach scramble using the Real Egg product, roasted parsnips, and a slice of melon. By the way, there are a lot of types of melons in season right now. Try them all!
