50 cents worth of Okra

About 4 months into my my paleo adventure, I became tired of the same old, same old.  Instead of turning back to those days of bagels, oatmeal and cereals, I discovered a whole bunch of new vegetables.  I remember grabbing a handful of Okra at Ralph’s supermarket and throwing it into my cart only to discover at checkout that it set me back a whopping fifty cents.  It is so easy to prepare.  Washing a handful is like washing grapes and they couldn’t slice any easier.  They seem a bit slimy on the cutting board but a very hot pan takes care of that.  Add them to your egg whites or omelets along with mushrooms and green onion, or all by themselves.  Today, I used them with some sliced chicken tenders.  Okra adds the perfect crunch along with vitamin C and calcium.  Give Okra a chance.
